Spaghetti Sauce from Fresh Tomatoes
A perfect way to use up extra garden produce. Use it fresh or freeze batches for later!
Servings: 6 servings
Equipment
- 1 blender or food processor
- 1 large pot
In a large pot, sauté the following until onions are transparent:
- 2 Tbsp. olive oil
- 1 large onion, chopped
Meanwhile, blend in a food processor or blender until the consistency of crushed tomatoes (don't process to the point of being juice)
- 8 pounds fresh tomatoes no need to peel
When the onions are cooked, add:
- 2 tsp. Braggs liquid aminos or soy sauce
- 6 cloves garlic, minced
After cooking for 1 minute, add the crushed tomatoes along with the following ingredients:
- 2 Tbsp. mushroom seasoning
- 12 basil leaves, chopped
- 1 Tbsp. fresh oregano, chopped or 1 tsp. dried
- 2 Tbsp. brown sugar
- 1 Tbsp. salt
