Smoked Cheddar Block Cheese
Smoked Cheddar Block Cheese
You can cube, shred, slice, and melt this cheese!
Servings: 5 cups
Equipment
- High speed blender
Combine in a Vitamix blender or other high-speed blender:
- 1 cup raw cashews
- ½ cup vegetable oil
- ⅓ cup nutritional yeast flakes
- ¼ cup mellow white miso paste
- 2 tsp. smoked paprika
- 2 tsp. onion powder
- 2½ tsp. salt
- 4 tsp. lemon juice
- 4 tsp. apple cider vinegar
- 1 Tbsp. water
Blend as smooth as possible. You may need to use the blender's tamper. Then add to the blender:
- ½ cup tapioca flour
- 2½ Tbsp. kappa carrageenan I order from Modernist Pantry
Stir into the blender mixture until mostly combined. Then pour in:
- 3 cups boiling water
