Stir together in a large salad bowl:

  • 1 large cucumber, diced
  • 2 medium tomatoes, diced
  • 1 bell pepper, diced
  • 1 cup pitted Kalamata olives, whole or halved
  • 1 cup tofu feta
  • ΒΌ tsp. salt or to taste
  • 1 Tbsp. lemon juice
  • 2 Tbsp. olive oil

Serve immediately.
