Taco Salad
Taco Salad
A family favorite for decades! It's a complete meal.
Servings: 6 servings
Toss in a large salad bowl:
- 1 head leaf lettuce, torn in bite-sized pieces
- 1 cup cooked kidney beans, drained or use pinto or black beans
- 1 medium onion, thinly sliced
- 1 can black olives, sliced optional
- 2 medium tomatoes, diced
- 1 avocado, diced optional
Just before serving, mix in:
- 3 cups crushed corn chips adjust to your liking
- ¼ cup
taco seasoning
Mix the following separately for dressing:
- ¼ cup olive oil
- ¼ cup lemon juice
- 3 Tbsp. sugar or honey
- ½ tsp. salt
- ¾ tsp. paprika
