Sauteed Corn and Zucchini
Sauteed Corn and Zucchini
Saute for 5 minutes:
- ⅓ cup olive oil
- ½ cup diced onion
Then add:
- 3 cups finely chopped zucchini (do not peel, but remove seeds if they are large)
Cook over medium heat for about 5 minutes, stirring occasionally.
Then add:
- 4 cups corn kernels, fresh or frozen
- ¾ tsp. salt
