Sauteed Corn and Zucchini

Saute for 5 minutes:

  • cup olive oil
  • ½ cup diced onion

Then add:

  • 3 cups finely chopped zucchini (do not peel, but remove seeds if they are large)

Cook over medium heat for about 5 minutes, stirring occasionally.

Then add:

  • 4 cups corn kernels, fresh or frozen
  • ¾ tsp. salt

Cook for an additional 3 minutes, stirring occasionally. Serve hot.
