Red Leaf Poppyseed Salad

Using a hand blender or small blender jar, blend together for salad dressing:

  • 2 Tbsp. lemon juice
  • cup olive oil
  • ¼ of a small onion
  • 2 Tbsp. granulated sugar
  • ½ tsp. salt
  • ½ tsp. poppy seeds
  • ½ tsp. yellow mustard

Then stir into dressing:

  • ½ tsp. poppy seeds

Toss the following ingredients together for the salad:

  • 1 head red leaf lettuce, washed and torn into bite-sized pieces
  • ½ pound white mushrooms, cleaned and chopped
  • 2 avocados, diced
  • 5 mandarin oranges, peeled, sectioned, and cut in small pieces

Pour dressing over, toss, and serve immediately.
