Spaghetti Sauce from Fresh Tomatoes

A perfect way to use up extra garden produce. Use it fresh or freeze batches for later!

Equipment

  • 1 blender or food processor
  • 1 large pot

In a large pot, sauté the following until onions are transparent:

  • 2 Tbsp. olive oil
  • 1 large onion, chopped

Meanwhile, blend in a food processor or blender until the consistency of crushed tomatoes (don't process to the point of being juice)

  • 8 pounds fresh tomatoes no need to peel

When the onions are cooked, add:

  • 2 tsp. Braggs liquid aminos or soy sauce
  • 6 cloves garlic, minced

After cooking for 1 minute, add the crushed tomatoes along with the following ingredients:

  • 2 Tbsp. mushroom seasoning
  • 12 basil leaves, chopped
  • 1 Tbsp. fresh oregano, chopped or 1 tsp. dried
  • 2 Tbsp. brown sugar
  • 1 Tbsp. salt

Bring to a boil and simmer for a couple hours, or until reduced to the desired consistency.
