Southwest Salad
A flavorful fiesta in every bite!
Servings: 6 servings
Mix all ingredients together in a large salad bowl:
- 2 cups cooked black beans, rinsed and drained or use one 15.5 oz can
- 1-2 cups corn fresh, frozen, or canned
- 1 medium tomato, diced
- ⅓ cup red onion, chopped
- 2 green onions, sliced green and white parts
- ¼ cup lime juice
- 1 Tbsp. olive oil
- 1 bunch cilantro, finely chopped
- ½ tsp. salt or to taste
- 1 medium avocado, diced
- 1 jalepeno, minced
