Southwest Salad

A flavorful fiesta in every bite!

Mix all ingredients together in a large salad bowl:

  • 2 cups cooked black beans, rinsed and drained or use one 15.5 oz can
  • 1-2 cups corn fresh, frozen, or canned
  • 1 medium tomato, diced
  • cup red onion, chopped
  • 2 green onions, sliced green and white parts
  • ¼ cup lime juice
  • 1 Tbsp. olive oil
  • 1 bunch cilantro, finely chopped
  • ½ tsp. salt or to taste
  • 1 medium avocado, diced
  • 1 jalepeno, minced

Serve immediately or refrigerate for a few hours before serving.
