Sauerkraut Latkes
The mashed potatoes work as a binder, so these hold together without eggs.
Combine in a mixing bowl:
- 1 part seasoned mashed potatoes leftovers work great
- 1 part sauerkraut
- finely chopped onion to taste
- salt to taste only if potatoes were not salted
Mix well. Heat a little oil (your choice what kind) in a nonstick frying pan. Meanwhile, use your hands to form the above mixture into small patties. Place in the hot frying pan and cook until browned. Flip and cook on the other side. Repeat with the remaining mixture, adding more oil as needed. There is no need to deep fry them; I just use a little oil in the pan. Serve hot.
Notes
Cooking tips:
- If your frying pan isn’t truly nonstick, spray it first with some nonstick spray.
- If the latke are breaking apart when you try to flip them, cook them longer before you try to turn them over.
