Mango Sticky Rice
An easy twist on a classic Filipino dessert
Servings: 6 people
Equipment
- microwave
Place in a large bowl and cover with two inches of water:
- 1½ cups glutinous rice available at an Asian store
Let rice soak for 4 hours or overnight.
Drain enough water off the rice so the water just barely covers the rice. Microwave on high for 3 minutes. Stir rice and microwave for another 3 minutes. Repeat until rice grains are no longer translucent inside and are soft and not chewy. This usually takes a total of 9 to 12 minutes. Transfer rice to a low pan, and prepare the sauce.
Place in a small saucepan:
- 1 can (13.5 oz) full-fat coconut milk
- 2 pinches salt
- ¼ cup brown sugar
Heat and stir until sauce just starts to simmer. Remove from heat and pour over rice. Stir. Allow to cool for 15 minutes. Serve warm topped with diced mango.
Notes
If fresh mangos aren’t available, simply use thawed frozen mango.
