Taco Salad

A family favorite for decades! It's a complete meal.

Toss in a large salad bowl:

  • 1 head leaf lettuce, torn in bite-sized pieces
  • 1 cup cooked kidney beans, drained or use pinto or black beans
  • 1 medium onion, thinly sliced
  • 1 can black olives, sliced optional
  • 2 medium tomatoes, diced
  • 1 avocado, diced optional

Just before serving, mix in:

Mix the following separately for dressing:

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 3 Tbsp. sugar or honey
  • ½ tsp. salt
  • ¾ tsp. paprika

Pour over salad. Mix and serve immediately.
