Preheat oven to 375°F.
In a large mixing bowl, mix the following ingredients:
- ½ cup coconut oil
- 1¼ cups brown sugar
- ½ tsp. powdered vanilla
- ¼ cup coconut milk
- ¼ cup unsweetened applesauce
Mix in a separate bowl:
- 2⅓ cups white flour spoon and level
- 1 tsp. baking soda
- ½ tsp. salt
Add dry ingredients to wet ingredients and stir until just combined. Then fold in:
Spoon into small mounds on a nonstick cookie sheet, leaving space between each cookie to allow for spreading. Bake for 9 or 10 minutes, or until the centers have set. Allow to cool before removing from pan.
