Easy Strawberry Jam

During strawberry season, I don't always have time to make canned strawberry jam, so I freeze all my extra berries. Then I use them to make jam throughout the year.

Place in a large bowl:

  • ¾ cup dried pineapple chunks
  • 4 cups frozen strawberries

Let stand on the counter overnight so the berries will thaw, and the berry juice will soak into the pineapple. In the morning, blend with a hand blender or food processor to the desired texture. Use caution if using a high-speed blender, as this can puree the jam too much.

Serve on toast or as a topping on cooked cereal.
