Muesli

This isn't your typical overnight oats–it's more of a thick fruit soup and is a weekly breakfast staple at our home.

In the evening, blend the following ingredients and pour into a large serving bowl:

  • cups water
  • ½ cup orange juice concentrate
  • 1⅓ cups raw cashews

Then add to the mixing bowl:

  • cups rolled oats not quick oats
  • ¾ cup raisins
  • ¾ cup chopped dried fruit e.g., dates, prunes, apples
  • juice and pulp of 2 oranges
  • 3 apples, finely grated
  • juice and pulp of 1 lemon or 3 Tbsp. lemon juice

Cover and refrigerate overnight. Serve topped with your choice of the following toppings:

  • chopped nuts
  • coconut flakes
  • sliced bananas
