Muesli
This isn't your typical overnight oats–it's more of a thick fruit soup and is a weekly breakfast staple at our home.
Servings: 6 servings
In the evening, blend the following ingredients and pour into a large serving bowl:
- 4½ cups water
- ½ cup orange juice concentrate
- 1⅓ cups raw cashews
Then add to the mixing bowl:
- 1½ cups rolled oats not quick oats
- ¾ cup raisins
- ¾ cup chopped dried fruit e.g., dates, prunes, apples
- juice and pulp of 2 oranges
- 3 apples, finely grated
- juice and pulp of 1 lemon or 3 Tbsp. lemon juice
Cover and refrigerate overnight. Serve topped with your choice of the following toppings:
- chopped nuts
- coconut flakes
- sliced bananas
