Mujadara

This is a great way to use up leftover cooked rice and lentils. The amounts of rice and lentils can be adjusted up or down depending on the amount of leftovers you have.

Combine in a large frying pan:

  • 2 Tbsp. olive oil
  • 2 Tbsp. minced garlic
  • 4 cups cooked brown rice
  • 4 cups cooked brown or green lentils
  • 1 tsp. cumin
  • ½ tsp. salt or to taste
  • ½ cup chopped fresh parsley or 3 Tbsp. dried parsley

Cook over medium heat for 5-10 minutes or until heated through.

For authentic mujadara, top with carmelized onions. (My family members don't care for fried onions, so we always just eat this dish without them.)

I like to top it with Garlic Yogurt Dipping Sauce
