Chipotle Bowls
Chipotle Bowls
My homemade take on the veggie bowls from the Chipotle restaurant.
Servings: 4 servings
Mix the following ingredients in a bowl:
- 1 package (14 oz) firm tofu, cut in small cubes
- 2 Tbsp. oil
- ½ tsp. chili powder
- ½ tsp. garlic powder
- ½ tsp. salt
- ½ tsp. smoked paprika
- ¼ tsp. cumin
- dash cayenne pepper
Spread on a nonstick baking sheet and bake at 400℉ for 20 minutes, stirring once halfway through.
Meanwhile, saute the following vegetables in a frying pan until tender:
- 1 onion, cut in rings
- 1 bell pepper, cut in strips
- 8 oz mushrooms, sliced
When the above ingredients are cooked, layer your choice of the following ingredients in individual bowls:
- cooked brown rice
- cooked black beans
- tofu from above
- cooked vegetables from above
- shredded lettuce
avocado tomato salad or guacamolevegan sour cream salsa - tabasco sauce green or chipotle flavored is best
