Broccoli Cheese Soup
Broccoli Cheese Soup
A creamy, delicious soup that is full of vegetables
Servings: 4 servings
Equipment
- Blender
Cover with water and simmer until soft
- 1¼ cups diced potatoes
- 1½ cups sliced carrots
- 1 onion, diced
When vegetables are cooked, drain, saving liquid. Place vegetables in a blender with the following ingredients:
- ½ cup cashews
- 3¼ cups water use water from cooking vegetables
- 1 tsp. salt
- 2 Tbsp. lemon juice
- ¼ cup yeast flakes
Blend until smooth and pour into a pot.
In a separate pot, lightly steam until just tender:
- 4 cups broccoli, cut in bite-sized pieces
Add broccoli to soup. If you want smaller pieces of broccoli, blend with an immersion blender until broccoli pieces are the desired size. Heat through and serve.
Notes
You can replace the broccoli with cauliflower.
