A creamy, delicious soup that is full of vegetables

Cover with water and simmer until soft
1¼cupsdiced potatoes
1½cupssliced carrots
1onion, diced
When vegetables are cooked, drain, saving liquid. Place vegetables in a blender with the following ingredients:
½cupcashews
3¼cupswateruse water from cooking vegetables
1tsp.salt
2Tbsp.lemon juice
¼cupyeast flakes
Blend until smooth and pour into a pot.
In a separate pot, lightly steam until just tender:
4cupsbroccoli, cut in bite-sized pieces
Add broccoli to soup. If you want smaller pieces of broccoli, blend with an immersion blender until broccoli pieces are the desired size. Heat through and serve.
