Lighter Greek Salad
Lighter Greek Salad
The dressing recipe is enough for two large salads. The dressing keeps well in the fridge.
Equipment
- microwave
To prepare tofu, drain, crumble, and spread on a plate:
- 1 pound firm or extra-firm tofu
Microwave uncovered for 5-10 minutes until it starts making a popping sound. Crumble the tofu into a quart jar. Combine the following ingredients, pour over tofu:
- 1½ cups
Soy Yogurt Link soy yogurt - ⅔ cup lemon juice
- ½ cup extra-virgin olive oil
- 2 Tbsp. dried basil
- 2½ tsp. salt
- 2 tsp. onion powder
- 2 tsp. dried dill
- 2 tsp. dried oregano
- 6 cloves garlic, minced finely
Stir well and chill in the refrigerator.
Assemble a salad using the desired amounts of any of the following ingredients:
- lettuce I like spring mix
- tomatoes, diced
- green onions, sliced
- onion, thinly sliced
- cucumbers, diced
- canned artichoke hearts, drained
- pickled banana peppers
- bell pepper, diced
- Kalamata Greek olives
- cooked garbanzos, drained well
- dressing from above
