Curried Lentil Soup
Curried Lentil Soup
A creamy, satisfying, hearty soup
Servings: 8 people
Sauté in a soup pot for 5 minutes:
- 2 large onions, chopped
- 2 Tbsp. olive oil
Then add:
- 4 cloves garlic, minced
- ¾ tsp. turmeric
- ½ Tbsp. garam masala
- ½ tsp. chili powder
- ½ Tbsp. cumin
Stir and sauté for 1 minute.
Then add the following ingredients:
- 4 cups water
- 1⅔ cups green or brown lentils
- 4 tsp. McKay's chicken seasoning
- ¾ tsp. salt
Bring to a boil. Reduce heat and simmer for 1 hour, or until lentils are soft. Then stir in:
- 1 can (28 oz) diced tomatoes
- 2 cans (13.5 oz) coconut milk
- 1 Tbsp. lemon juice
Heat through and serve.
Notes
This soup freezes well.
