White Lasagna Soup
White Lasagna Soup
A rich, creamy soup
Place in a 6-qt. Instant Pot or other pressure cooker:
- 9 cups water
- 2 Tbsp. olive oil
- 10 cloves garlic, minced
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 Tbsp. Italian seasoning
- ⅓ cup nutritional yeast flakes
- 1 Tbsp. sugar or other sweetener
- 1 tsp. salt or to taste
- 2½ Tbsp. McKay's chicken seasoning
- 12 lasagna noodles, broken into 1-inch pieces
Cook at high pressure for 5 minutes.
Meanwhile, blend smooth:
- 1½ cups water
- 1½ cups raw cashews
- ⅓ cup lemon juice
When soup is cooked, release pressure immediately and stir in:
- cashew cream from above
- 1 lb. chopped spinach fresh or frozen
Heat through and serve immediately.

Notes: You can replace the lasagna noodles with 3 cups small shell pasta.
