White Lasagna Soup

A rich, creamy soup

Place in a 6-qt. Instant Pot or other pressure cooker:

  • 9 cups water
  • 2 Tbsp. olive oil
  • 10 cloves garlic, minced
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 Tbsp. Italian seasoning
  • cup nutritional yeast flakes
  • 1 Tbsp. sugar or other sweetener
  • 1 tsp. salt or to taste
  • Tbsp. McKay's chicken seasoning
  • 12 lasagna noodles, broken into 1-inch pieces

Cook at high pressure for 5 minutes.

Meanwhile, blend smooth:

  • cups water
  • cups raw cashews
  • cup lemon juice

When soup is cooked, release pressure immediately and stir in:

  • cashew cream from above
  • 1 lb. chopped spinach fresh or frozen

Heat through and serve immediately.

Notes

Notes: You can replace the lasagna noodles with 3 cups small shell pasta.
