Pumpkin Molasses Cookies

Pumpkin Molasses Cookies
Servings: 15 cookies
Preheat oven to 350℉. Mix together well:
- ¾ cup plant-based margarine
- 1 cup brown sugar
- ¼ cup molasses
- ¼ cup pumpkin or squash puree
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- ½ tsp. salt
- 1 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- ½ tsp. ground ginger
Then add:
- 2½ cups all-purpose flour
Roll dough into balls and flatten. Place on a nonstick baking sheet. Bake for 10-11 minutes. Allow to cool.
Notes
Variation: Replace pumpkin puree with 3 Tbsp. applesauce.
