Ketchup Roast

- Food processor recommended
Using a food processor, chop each of these ingredients separately:
- 4 cups bread crumbs use the food processor to make crumbs from sliced bread
- 1½ cups finely chopped pecans or walnuts
- 1 cup chopped onion
Transfer to a large bowl. Add the following ingredients and mix well:
- 2 blocks (14-16 oz) firm or extra-firm tofu, mashed
- 1 cup water
- ¼ cup Braggs liquid aminos or soy sauce
- 1 cup quick oats
- 1 tsp. sage
- ½ tsp. garlic powder
- 1 tsp. salt
- 1 tsp. dried basil
- 1 Tbsp. McKay's chicken seasoning
Press mixture into an 11×14 baking dish. Bake at 350℉ for 30 minutes.
Meanwhile, mix all the following ingredients together for the sauce. Set aside.
- ½ cup oil
- ½ cup lemon juice
- 1½ cups apricot jam
- 1 cup ketchup
- ¼ cup brown sugar
- ¼ cup minced onion
- 1 tsp. salt
- 1 tsp. oregano
