Texas Caviar
Stir all ingredients together in a large bowl:
- 3 cups cooked black-eyed peas or 2 cans (15 oz)
- 1½ cups cooked black beans or 1 can (15 oz)
- 2 cups corn fresh or frozen
- 2 bell peppers, diced small
- 1 jalapeno pepper, seeded and minced
- 5 cloves garlic, minced
- ¼ cup chopped cilantro
- 3 green onions, sliced or ¼ minced onion
- ¼ cup olive oil
- 2 Tbsp. apple cider vinegar
- 2 tsp. salt
- ¼ cup lime juice
