Tofu Mazemen

Ramen noodles coated in a rich sauce and accompanied by bok choy and mushrooms create a tasty, Japanese-inspired dish.

Prepare the following sauce and set aside:

  • 1/4 cup tahini
  • 8 tsp. chili crisp
  • 4 tsp. white miso paste
  • 4 tsp. Braggs liquid aminos
  • 1/2 cup water

Heat a large wok or frying pan and sauté the following:

  • 8 ounces fresh mushrooms, sliced
  • 1 Tbsp. oil
  • sprinkle salt

When mushrooms begin to brown, add the following ingredients:

  • 1 14–16 oz package firm or extra firm tofu, coarsely crumbled
  • 1 large head bok choy, coarsely chopped
  • 2 green onions, sliced
  • Sauce from above

Cook on medium heat, stirring occasionally to prevent sticking. Meanwhile, cook according to the directions on the package:

  • 12 oz ramen noodles

Drain noodles. When bok choy is wilted and the stems are no longer crunchy, toss in the noodles and serve.
