Tofu Mazemen
Ramen noodles coated in a rich sauce and accompanied by bok choy and mushrooms create a tasty, Japanese-inspired dish.

Prepare the following sauce and set aside:

Heat a large wok or frying pan and sauté the following:

fresh mushrooms, sliced

When mushrooms begin to brown, add the following ingredients:

package firm or extra firm tofu, coarsely crumbled

bok choy, coarsely chopped

Sauce from above
Cook on medium heat, stirring occasionally to prevent sticking. Meanwhile, cook according to the directions on the package:

Drain noodles. When bok choy is wilted and the stems are no longer crunchy, toss in the noodles and serve.
