This isn't your typical overnight oats–it's more of a thick fruit soup and is a weekly breakfast staple at our home.
Servings: 6 servings
In the evening, blend the following ingredients and pour into a large serving bowl:
- 3 cups water
- ¾ cup orange juice concentrate
- 1⅔ cups raw cashews
Then add to the mixing bowl:
- 4 cups water
- 2½ cups rolled oats not quick oats
- 1+ cup raisins
- 1+ cup chopped dried fruit e.g., dates, prunes, apples
- juice and pulp of 3 oranges
- 4-5 apples, finely grated
- juice and pulp of 2 lemons or ⅓ cup lemon juice
Cover and refrigerate overnight. Serve topped with your choice of the following toppings:
- chopped nuts
- coconut flakes
- sliced bananas
