Four Bean Salad

We served this at our wedding reception. It's a favorite of my husband's.

Mix the following in a salad bowl:

  • 1 can (14 oz) green beans
  • 1 can (14 oz) yellow wax beans
  • 1 can (14 oz) kidney beans
  • 1 can (14 oz) garbanzos
  • ½ cup chopped pimento
  • 1 small onion, thinly sliced

Mix the following ingredients separately for the dressing:

  • 1 cup lemon juice
  • cup brown sugar
  • cup olive oil
  • ½ tsp. salt

Mix dressing ingredients and pour over beans above. Stir well. Cover and place in refrigerator to marinate at least overnight before serving. Stir occasionally to marinate thoroughly.
