Quick Chili

This recipe uses exclusively packaged ingredients and comes together very quickly.

Brown in a large pot:

  • 2 packages (12 oz) vegetarian burger crumbles
  • 1 large onion, chopped
  • 2 Tbsp. oil

When onions are cooked, stir in (no need to drain anything):

  • 2 cans (15.5 oz) pinto beans
  • 1 can (15.5 oz) kidney beans
  • 1 can (15.5 oz) whole kernel corn
  • 1 can (14.5 oz) Mexican style stewed tomatoes
  • 1 can (28 oz) diced tomatoes
  • 1 can (10 oz) Ro-Tel
  • 1 can (7 oz) diced green chilies
  • 1 package taco seasoning
  • 1 package non-dairy ranch dip mix

Heat through and serve.

Notes

Ranch dip mix, as opposed to ranch dressing mix, is often non-dairy.
