Arrange in a single layer on a baking sheet:
- 2 pounds green tomatoes, quartered
- 4 jalapeño peppers, halved and seeds removed
- 2 small to medium onions, halved
- 6 cloves garlic
Broil on the top rack of the oven for 5 minutes (or less if vegetables are starting to blacken). Turn vegetables over and broil for another 5 minutes.
Place the following ingredients in a food processor:
- 1 cup cilantro cut sprigs in a few pieces
- ⅓ cup lime juice
- ½ Tbsp. salt
- Roasted vegetables from above
Process on high until salsa reaches the desired consistency. Chill and serve.
