Stir all ingredients together in a large bowl:

  • 3 cups cooked black-eyed peas or 2 cans (15 oz)
  • cups cooked black beans or 1 can (15 oz)
  • 2 cups corn fresh or frozen
  • 2 bell peppers, diced small
  • 1 jalapeno pepper, seeded and minced
  • 5 cloves garlic, minced
  • ¼ cup chopped cilantro
  • 3 green onions, sliced or ¼ minced onion
  • ¼ cup olive oil
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. salt
  • ¼ cup lime juice

Stir well, and refrigerate for at least 1 hour before serving. Serve with tortilla chips.
