Slice thinly (use a food processor if you have one):
12medium-to-large apples
Place apples in a large pot and stir in the following ingredients:
1tsp.cinnamonor coriander
¾cupapple juice concentrate
Cook over medium heat for 5 minutes. Transfer apples to a 9 x 13 baking dish.
To prepare the topping, combine the following ingredients in a mixing bowl:
3cupsrolled oats
½cupwhole wheat flour
1cupchopped walnuts
½tsp.salt
1tsp.cinnamonor coriander
¼tsp.powdered vanilla
¼cupvegetable oil
½cupmaple syrup
Mix well and spread over apples. Bake at 350℉ for 30 minutes. Serve warm or chilled.
