Easy Greek Salad
This one is a favorite with the kids!

Drain thoroughly and crumble into a salad bowl:

pound
firm tofu
Then mix into the tofu:

salt

tsp.
dried basil
½
tsp.
dried oregano

Tbsp.
olive oil

Tbsp.
lemon juice
3
Tbsp.
finely minced onion or sliced green onion
Layer the following on top of the tofu mixture:

Greek olives, halved

cucumber, diced

tomatoes, diced
Serve immediately or refrigerate until ready to serve. Stir just before serving.
