Preheat oven to 350℉. Stir together in a medium-sized mixing bowl:
1cupnatural peanut butter
¼cupunsweetened applesauce
½Tbsp.baking powder
¼tsp.vanilla powderor 1 tsp. vanilla extract
⅔cupbrown sugar
¼tsp.salt
⅓cupwhole-wheat flour
Stir all ingredients together, adding flour last. Mix the flour in with your hands. Add additional flour if need so the dough will form smooth, firm balls. Using your hands, roll the dough into walnut-sized balls, and place on a non-stick cookie sheet. Flatten with a fork. Bake for 12 minutes. Let cool on pan.
