Combine the following ingredients in a small pot:
2cupswater
6Tbsp.lemon juice
1Tbsp.salt
2tsp.dried basil
2tsp.dried oregano
2Tbsp.nutritional yeast flakes
1poundfirm or extra-firm tofu, drained and cut in ½ inch cubesno need to press the tofu
Bring to a boil and simmer uncovered for 30 minutes.
Store tofu and brine into an air-tight container in the fridge. The longer you leave it, the better it gets. Drain immediately before use. Any unused portions can stay refrigerated in the brine for up to 2 weeks.
